Ingredents
1 Cup Long Grain White Rice 1/2 Cup Chopped Green Bell Pepper 1/2 Cup Chopped Red Bell Pepper 1/2 Cup Chopped Onion 1 Can Chicken Broth 1 Can Rotel Diced Tomatoes 3 Tbs Olive Oil Fresh Garlic Minced

Preparation
Heat Olive Oil. Saute Onion, Bell Pepper and Garlic. Add rice and cook until it is a nice brown color. Add Rotel and Chicken Broth. Cook until rice has absorbed liquid (about 20 minutes).
